Our pigs are pasture raised on the ranch-no grains just grass and browse. The pigs are not huge but they are tender and juicy, fatty where you want them but in general a lean and tender protein choice. Plan on 20 lbs sausage (breakfast, Italian, Chorizo), Lard, Belly smoked into bacon, 2 smoked hocks, 1 ham,10 chops, 1 tenderloin, 1 loin roast, 4 shoulder roasts and a rack of spare ribs. Approx. 100 lbs.
